Abstract

As a result of the formal recognition of the Geographical Indication of Venda Nova do Imigrante’s Socol, we highlight the performance of the entities that compose the Geographical Indications and Collective Trademarks Forum of Espírito Santo state in the construction of standard sanitary rules for Socol. The dynamics and the main results of this work are described with emphasis on the preservation of the producers’ know-how, and on the commercial protection of the term Socol for the typically handmade meat product, maintaining food safety. Furthermore, as a result, the possibility of opening the national market to Socol was also observed, due to the product being eligible for Selo Arte rules.
